The fastest way to out yourself as a tourist in Seoul: planning one restaurant for the whole evening. Korean nights move in rounds — cha (차). Dinner is round one. Drinks are round two. And round three is the finisher, a near-sacred late-night dish that closes the show. Here is how to run the full program in Yeonnam-dong.

1cha: the food base — grilled meat or, in our world, raw beef with the first soju. 2cha: the drinking venue — a bar, pub or pojangmacha tent. 3cha: the finisher — noodles, soup rice or a noraebang (karaoke) detour. The deeper the friendship, the higher the round count. Everything in Yeonnam-dong sits within a 10-minute walk, which makes it Seoul's ideal round-running arena.

Korea's late-night canon: ramyeon (instant-noodle perfection), gukbap (restorative soup rice) and bibim-myeon (sweet-spicy chilled noodles).
